Tofu is such a staple in my house! There's so many ways to enjoy it, one of my favorite being this crispy, fried, sesame flavored-tofu. It's a great way to make sure you're getting protein in your diet, PLUS it just tastes sooo good. And you can pair it with any veggies you like, and a bowl of rice to make it a complete meal. YUM!
Ingredients:
1 package of extra-firm tofu (Trader Joes has a great one!)
2 tbsp cornstarch
2 tbsp olive oil (or coconut)
3 scallions, chopped
(optional) 1 tbsp sesame seeds for topping!
Sesame Sauce: Make your own with this recipe, or try this pre-made one from Trader Joe's!
1 (or more, to your preference) garlic clove, minced
2 tsp minced ginger (Trader Joe's has this great frozen minced ginger)
2 tbsp soy sauce, tamari, or coconut aminos
1 tbsp sesame oil
1 tbsp maple syrup
1 tbsp rice vinegar
1/2 tbsp cornstarch mixed with 1 tbsp cold water
Steps:
Open & drain the tofu package. Press out the extra water by wrapping in a kitchen towel, and placing on top of a plate with something heavy on top (a large pot with a bag of rice inside or something!)
Cube the tofu into sizes of your liking, then toss in a bowl with cornstarch and make sure all pieces get covered.
Heat the coconut oil in a pan on medium-high heat then add the tofu & cook on each side until golden brown (2-3 minute per side).
Use this time to prepare the sauce, if making homemade. Just mix all ingredients together & stir!
Pour the sauce, chopped green onions into the pan when tofu is done cooking & coat all pieces of the tofu.
Serve up with your favorite sides!
