Plant Based Breakfast Burrito featuring Trader Joe's


Who doesn't love a good breakfast burrito?! This one is 100% plant based and 100% delicious. Most ingredients from Trader Joe's! Enjoy :)



Ingredients:

  • Tortilla: pick your favorite burrito wrap!

  • Tofu

  • Veggies: I used cherry tomatoes

  • Hashbrowns: I used Trader Joe's frozen hash-browns

  • Seasonings: turmeric, paprika, salt, pepper, cumin

Recipe:

  1. Press your tofu! If you don't have a tofu press, you can wrap in a cloth or paper towels and put something heavy on top to squeeze all the water out. Leave for 15 min.

  2. While that is cooking you can defrost your hashbrown. I defrost mine right in the toaster oven to save time.

  3. Coat a skillet with olive oil, add the tofu (crumble with your hands as you add in).

  4. Let the tofu cook alone for a few minutes until more water is cooked out.

  5. Now you can add your spices - start with a little, taste & add more as you go!

  6. Chop your veggies & either add in to cook them a bit, scramble with the tofu, or you can add raw.

  7. Assemble, take picture, enjoy!

  • Black Beans

  • Guacamole

  • Hot Sauce

  • Salsa

  • Sauteed broccoli or any other veg!

  • Rice instead of hashbrowns
