Who doesn't love a good breakfast burrito?! This one is 100% plant based and 100% delicious. Most ingredients from Trader Joe's! Enjoy :)
Ingredients:
Tortilla: pick your favorite burrito wrap!
Tofu
Veggies: I used cherry tomatoes
Hashbrowns: I used Trader Joe's frozen hash-browns
Seasonings: turmeric, paprika, salt, pepper, cumin
Recipe:
Press your tofu! If you don't have a tofu press, you can wrap in a cloth or paper towels and put something heavy on top to squeeze all the water out. Leave for 15 min.
While that is cooking you can defrost your hashbrown. I defrost mine right in the toaster oven to save time.
Coat a skillet with olive oil, add the tofu (crumble with your hands as you add in).
Let the tofu cook alone for a few minutes until more water is cooked out.
Now you can add your spices - start with a little, taste & add more as you go!
Chop your veggies & either add in to cook them a bit, scramble with the tofu, or you can add raw.
Assemble, take picture, enjoy!
