Summer pasta salad with grilled veggies


Super simple (as I try to be), but delicious pasta salad that's 100% plant-based, completely satisfying, and totally versatile - you can add whatever you want to make this fit your flavor pallet.


Another thing I love about this recipe, is you can really easily adjust the size to however many people are eating - or make ahead and have some meal prepped lunches for the week!



Here we go!


Ingredients:

  • Pasta of your choice, I used shells

  • 1 Green & 1 Yellow squash / zucchini

  • Handful of cherry tomatoes

  • Olive Oil

  • Herbs of your choice! (garlic, chives, oregano, basil, parsley - any combination!)

Recipe:

  1. Bring pot of water to a boil, add pasta

  2. Slice the zucchini & squash lengthwise, cutting off the ends

  3. Coat in olive oil & seasonings

  4. Grill to your liking - I like a little bit of a char, but not too much!

  5. While the pasta is boiling & zucchini is on the grill, cut the cherry tomatoes in half

  6. Drain the pasta, chop the grilled zucchini, and then add everything to a bowl!


I told you, this is so simple! And you can really make it your own. Here's a few suggestions you may want to add:

  • Use a bean-based pasta, or just add beans for more protein

  • Add grilled tofu

  • Black olives

  • If you prefer a sauce instead of garlic & olive oil, that would work too!
