Crispy Chickpea Snack

Now, I'm someone who could literally just eat a can of chickpeas plain because they already have a great texture, they're meaty, a little salty, and I know how much goodness is packed inside of them.

Baking them with your favorite seasonings just takes them to another level of snack that you must try if you haven't yet!

Ingredients

  • 1 can (15 ounces) of chickpeas (garbanzo beans), drained and rinsed

  • 2 tablespoons olive oil

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon cayenne pepper (adjust to your spice preference)

  • Salt and black pepper to taste

  • Optional: a pinch of smoked paprika for added smokiness

  • Cooking spray (olive oil or canola oil)

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Place a baking sheet or a large oven-safe pan in the oven as it preheats.

Step 2: Dry the chickpeas

After draining and rinsing the chickpeas, spread them out on a clean kitchen towel or paper towels. Pat them dry gently to remove excess moisture. This step is crucial for achieving crispiness.

Step 3: Season the Chickpeas

In a bowl, combine the dried chickpeas, olive oil, ground cumin, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Toss to coat the chickpeas evenly with the seasoning mix. Optionally, add a pinch of smoked paprika for extra flavor.

Step 4: Spread on the preheated pan

Carefully remove the preheated baking sheet or pan from the oven. Coat it with a thin layer of cooking spray to prevent sticking. Spread the seasoned chickpeas in a single layer on the hot baking sheet.

Step 5: Bake

Place the baking sheet back in the preheated oven and bake for 25-30 minutes, or until the chickpeas are golden brown and crispy. You may want to give them a little shake or stir around the 15-minute mark to ensure even cooking.

Step 6: Cool & Enjoy!

Once the chickpeas are done, remove them from the oven and let them cool slightly. They will continue to crisp up as they cool. Once they're at your desired level of crispiness, transfer them to a serving bowl and enjoy as a delicious and nutritious snack.
